Viennese Cucumber Salad

Gurkensalat is Vienna’s most popular salad and may be prepared in several inviting ways. Sometimes it is made with lemon juice instead of vinegar; without sugar; with garlic; or with a garnish of paprika. This is a common version.

INGREDIENTS

3 medium cucumbers.

Salt.

1-quarter cup white-wine vinegar.

1-quarter cup vegetable oil.

1 teaspoon sugar.

Freshly ground white pepper.

Chopped chives or parsley.

COOKING

Peel the cucumbers and score with a fork. Cut into paper-thin slices. Put in a bowl and sprinkle with salt. Leave for 30 minutes. Drain well. Arrange it in a bowl. Add the vinegar, oil, and sugar. Season with salt and pepper. Mix well. Serve garnished with chopped chives or parsley. Serves 4 to 6.

Sour cream may be added to the salad if desired.
