These chewy chocolate cookies, made without flour, are great with a cup of coffee.
Ingredients
- 450g icing sugar
- 90g cocoa powder
- 5 egg whites at room temperature
- 225g dark chocolate (55%), chopped into small pieces
- 2 tsp vanilla extract
Method
Preheat the oven to 190C/170C fan/gas mark 5. Line a couple of baking trays with parchment paper.
Step 2
Combine 450g icing sugar, 90g cocoa powder and a pinch of salt in a bowl. Add 5 room temperature egg whites and beat the mixture to a stiff batter. Fold through 225g chopped dark chocolate and 2 tsp vanilla extract.
Step 3
Drop teaspoonfuls of the mixture onto the lined trays, leaving enough space between them for the cookies to expand to at least double their size during baking.
Step 4
Bake for 10 minutes until they look like flat meringues. They will be cracked and chewy. Allow to cool on the tray. Store in an airtight container.
