4 easy crockpot recipes you should try
Autumn has officially arrived! If you haven’t used your crockpot in a while, it’s time to pull it out and try these delicious fall favourites!
1. Pot Roast
Prep time: 20 minutes
Cook time: 8 hours
Servings: 6
Ingredients:
- 3-4 lbs chuck roast
- 4 large potatoes, peeled and chopped
- 3-4 long carrots chopped
- 1 yellow onion sliced
- 4 cloves of minced garlic
- 1 packet of pot roast seasoning (follow instructions on back of packet)
- Salt and pepper for taste
Put the chopped potatoes, carrots, and onions in the bottom of the slow cooker. Place the roast on top of the vegetables. Add your seasonings.
Cover and cook on low for 8 hours. Once finished, remove the roast and let it rest for 10 minutes before slicing. Serve the roast with the vegetables and some tasty dinner rolls. Store leftovers in an airtight container.
2. Chicken Tortilla Soup
Prep time: 10 minutes
Cook time: 8 hours
Servings: 6
Ingredients:
- 1 pound boneless skinless chicken breast
- 1 medium onion, diced
- 14.5-ounce can of chicken broth
- 1 can of corn, undrained
- 1 cup of water
- 1 can diced tomatoes
- 1 can of mild Rotel
- 1 can of red enchilada sauce
- 1 packet of taco seasoning
- Salt and pepper to taste
- ½ teaspoon chili powder
- 2 garlic cloves minced
Toppings:
- Shredded cheddar cheese
- Tortilla strips
- Avacado
Place 1 pound of chicken breast into the crockpot. Season it with salt and pepper. Add your onion and garlic. Then, pour in your chicken broth, water, canned tomatoes, corn, and enchilada sauce. Sprinkle the taco seasoning and chili powder, and stir everything to combine well.
Put the lid on and cook on low for 8 hours. Before serving, remove the chicken breast, shred it, and then add it back to the soup, giving it another good stir. Serve in a soup bowl with added toppings. Store leftovers in an airtight container.
3. French Dip Sandwiches
Prep time: 20 minutes
Cook time: 8-10 hours
Servings: 6
Ingredients:
- 3-pound chuck roast
- 1 cup of beef broth
- ¼ cup of soy sauce
- ¼ cup of Worcestershire sauce
- 1 teaspoon of onion powder
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- 6 hoagie rolls
- 6 slices of provolone cheese can be used, shredded as well
Season the chuck roast with the seasonings listed above. Place the roast in the crockpot. Add beef broth, soy sauce, and Worcestershire sauce. Cook on low for 8 to 10 hours.
Remove the chuck roast and shred it with two forks. Return it to the crockpot and stir. Add the meat to hoagie rolls and top with your choice of cheese. Pour some of the juice from the crockpot into a bowl. Dip your sandwich into it.
4. Salisbury Steak Meatballs
Prep time: 20-30 minutes
Cook time: 6 hours
Servings: 6
Ingredients:
- 1 pound of ground beef
- ½ cup of breadcrumbs
- 1 egg
- ¼ cup grated onion
- 1 teaspoon of Worcestershire sauce
- 1 teaspoon of garlic powder
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 2 cups beef broth
- 1 packet of onion soup mix
- 2 tablespoons of cornstarch mixed with two tablespoons of water
In a bowl, mix ground beef, breadcrumbs, egg, grated onion, Worcestershire sauce, garlic powder, parsley, salt, and pepper. Form into small meatballs. Sauté in a pan to seal. This step will help ensure the meatballs don’t fall apart in the crockpot.
Add meatballs to the crockpot. Mix the beef broth and onion soup mix, then pour it over the meatballs. Cover and cook on low for 6 hours. Stir in the cornstarch mixture during the last 30 minutes of cooking. This step isn’t necessary, but it helps create a smooth gravy. You can then enjoy the meatballs on their own or serve them over mashed potatoes, rice, or noodles.
