Swedish Biff À La Lindstrom

This version of a hamburger is an intriguing combination that is traditionally served in Sweden with a fried egg on top of each meat patty.

Recipes

2 pounds ground beef.
3 egg yolks.
1 cup mashed cooked potatoes.
Salt, pepper to taste.
One third minced onions.
1 cup finely chopped cooked beets.
2 tablespoons drained capers.
2 tablespoons heavy cream butter for frying.

The Cooking

Put the beef, egg yolks, mashed potatoes, salt, and pepper in a large bowl and mix with a large spoon or the hands until all the ingredients are thoroughly combined. Mix together with the onions, beets, capers, and cream and stir into the meat mixture. Mix until well combined. Shape into large patties and fry in butter on both sides until well cooked. Makes about ten patties. Serve with a fried egg on top of each, if desired.
