Salad Valenciana
The region of Valencia on Spain’s eastern Mediterranean coast is noted for many glories, including flavorful oranges. Such is the beauty of the white flowers that open in the evening that the area has been called the Coast of Orange Blossoms. This is a typical salad featuring oranges.
2 large oranges, peeled and sliced.
1 large white onion, peeled and sliced.
3 or 4 tablespoons olive oil.
1 or 2 tablespoons of wine vinegar.
Salt, and pepper to taste.
Salad greens.
Pitted black olives.
Combine the orange and onion slices, oil, vinegar, salt, and pepper in a bowl and leave for 1 hour. Stir the ingredients now and then. Serve over or mix with salad greens. Garnish with olives.
