Recipe: Healthy Shredded Chicken Salad
INGREDIENTS
- 3 cups salad greens
- 2 scallions
- 1 cup shredded chicken
- 1 cucumber
- 1 tbsp chopped basil
- 1 cup tomatoes, chopped
- 1 cup roasted veg – peppers and cauliflower
DRESSING
- 1/3 cup cashews, soaked in water
- 1/4 cup water
- 1 tbsp pickled jalapenos
- 1 tbsp chopped basil
- 3 grape tomatoes
- 1 garlic clove
- Salt and pepper
INSTRUCTIONS
- For the cashew sauce, you will need soaked cashews. If you haven’t soaked them for at least 3 hours you can still make the sauce by soaking them in hot water for about 15 minutes. Then drain the water and add all ingredients for the dressing into a blender or a nut grinder and blend until smooth. Add salt and pepper to taste and you’re done!
- Cut the cucumbers, greens, basil, tomatoes, and scallions. If you don’t have any – boil some chicken and shred it.
- Now add all ingredients to a bowl, toss and adjust for salt and pepper. Enjoy
