Portuguese Egg Pudding
This typical Portuguese pudding is one of their many great desserts made with sugar and eggs. It is a type of custard but richer than most.
2 and a half cups of sugar.
Half a cup of orange juice.
8 large eggs.
2 tablespoons grated orange rind.
Combine the sugar and orange juice in a saucepan and cook on low heat until the mixture begins to thicken about 15 minutes. Take from the stove and cool a little. Beat the eggs together and stir into the sugar mixture. Add the grated rind. Mix very well.
Turn into a mold or individual custard cups. Place in a pan of hot water and bake in a preheated slow oven for about 45 minutes, or until set.
