Pasta, Rice & Other Grains Meals: Fettuccine Romano
One of the best and most famous dishes made with egg noodles is called fettuccine. Because it is served lavishly in two popular restaurants in Rome, each named Alfredo’s, the dish is sometimes called by that name. For it, homemade fettuccine are preferable, but those sold fresh in Italian or specialty food stores or packages of dry medium noodles can be used.
Recipe
1 pound fettuccine or medium egg noodles.
Half cup soft butter.
1 cup warm heavy cream.
Freshly ground white pepper.
2 cups grated Parmesan cheese, preferably freshly grated.
The Cooking
Cook the fettuccine or noodles in salted boiling water until just tender, allowing about five minutes for the fettuccine and eight for the noodles, Drain. Spoon at once into a large skillet or chafing dish. Put the dish over very low heat. Add the butter and stir gently with the noodles until it melts. Add the cream and pepper and toss with two large forks. Add half cup of the cheese and continue tossing all the ingredients until they are well mixed and hot. Serve the remaining cheese separately to be sprinkled over the noodles at the table.
