Mixed Salad From Liechtenstein

A luncheon here remains one of the most favorable European meals.

The menu includes consomme with tiny liver noodles, pork fillets with a morel sauce, buttered thin green noodles, carrots Vichy, mixed vegetable salad, and a delicate pink raspberry sherbet with a champagne sauce. It was topped with a single wild mountain strawberry and accompanied by petits-fours.

INGREDIENTS

1 cup drained niblets.

1 can (1 pound) kidney beans, drained.

1 cup chopped cucumber.

1 medium onion, finely chopped.

2 medium tomatoes, peeled and chopped.

3 tablespoons vegetable oil.

2 tablespoons red wine vinegar.

Salt, and pepper to taste.

Combine all the ingredients in a large bowl and mix well. Chill. Serves 6 to 8.
