German Heaven & Earth Meal
Himmel und Erde, a simple combination of potatoes and apples, is a specialty of the Rhineland and is eaten traditionally with slices of fried blood sausage.
2 pounds potatoes, washed and peeled.
2 pounds apples, cored and peeled.
Pinch sugar.
Salt, and pepper to taste.
One-quarter pound bacon, chopped and cooked.
Cook the potatoes in water to cover until tender. Drain and mash. Cook the apples in water to cover until soft. Drain and puree. While still hot, combine the potatoes and apples. Season with sugar, salt, and pepper. Have the bacon already cooked and sprinkle it and a little fat, over the potato-apple mixture.
