Dutch Vegetable Soup With Meatballs

The Dutch are great devotees of meatballs, bulletjes, which they serve in a number of inviting dishes. This is one of their great favorites. It can be served as a one-dish meal for dinner and supper.

 

Ingredients

 

1 pound ground veal.

1 egg.

2 teaspoons curry powder.

2 slices white bread, without the crust.

One-fourth cup of milk.

1 large onion, chopped.

1 large carrot, scraped and chopped.

1 large leek, white part only, cleaned and thinly sliced.

1 large celery stalk, cleaned and chopped.

2 tablespoons butter or margarine,

1 tablespoon vegetable oil.

1 and a half quarts beef bouillon.

One-fourth teaspoon of dried marjoram.

1 and a half broken vermicelli.

One-fourth cup chopped fresh parsley.
