DIY recipes: Strawberry banana blended baked oats

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 overripe banana
  • 2 large eggs
  • 1/2 cup unsweetened almond milk or milk of choice
  • 2 tablespoons honey or sweetener of choice
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/3 cup chopped fresh strawberries
  • 1/4 cup chocolate chips (optional)

Directions

  1. Preheat the oven to 350 degrees F (180 degrees C).

  2. Combine oats, banana, eggs, almond milk, honey, baking powder, vanilla, cinnamon, and salt in a high speed blender and blend until smooth. Remove the blade and fold in chopped strawberries.

  3. Divide batter evenly between 4 ramekins and sprinkle chocolate chips on top.

  4. Bake in the preheated oven until baked oats are puffed and light golden brown, about 25 minutes.

  5. Let cool for at least 5 minutes and serve warm or at room temperature.

    Cook’s Note

    You can swap out the strawberries for blueberries, raspberries, blackberries or a mix of whatever you like.
