Dish: Pollo Alla Cacciatora

Italian chicken “hunter’s style” is a flavorful and attractive creation cooked in a colourful sauce made by a medley of ingredients.

Recipe

1 frying chicken (about 3 pounds), cut up.

3 tablespoons olive oil.

2 tablespoons butter.

2 medium onions, sliced.

1 or 2 garlic cloves, crushed.

4 Medium tomatoes, peeled, seeded and chopped.

1 can (8 ounces) tomato sauce.

Half cup dry white wine.

2 tablespoons chopped fresh parsley.

Half teaspoon dried basil.

Salt, Pepper to taste.

The Cooking.

Wash the chicken pieces and pat dry. Heat the oil and butter in a large skillet and brown the chicken on all sides. Remove and keep warm. Add the onions and garlic to the drippings and cook until tender. Add the remaining ingredients and cook slowly, uncovered, for 10 minutes. Return the chicken pieces to the skillet and cook slowly, covered, about 30 minutes, or until the chicken is just tender.
