Dish: English Yorkshire Pudding

This baked unsweetened batter called pudding, which takes its name from Yorkshire, a county in northeastern England, is the traditional accompaniment for roast beef. The dish is cooked in drippings from the roast.

Recipe

2 eggs.

Half teaspoon salt.

1 cup of milk.

1 cup all-purpose flour.

3 tablespoons beef drippings or lard.

Beat the eggs with a rotary or electric beater until well mixed. Season with salt. Gradually, add the milk, beating while you do so. Slowly add the flour, still beating, and continue to beat until the mixture is smooth and creamy. Heat the drippings or lard and pour into a shallow baking pan.

Mix the batter again and pour into the dish. Bake in a preheated hot oven for 10 minutes. Reduce the heat and cook until golden and puffy, about 15 minutes. Cut the pudding into squares and serve at once.
