Dessert: English Fruit Fool

This is a beloved traditional English dessert that was made originally with green gooseberries. Today it is also prepared with other fruit such as raspberries. The name supposedly came about because a fool was a simple mixture. No matter, it is a delectable dessert.

 

Ingredients

1 quart fresh gooseberries or raspberries.

1 cup sugar.

1 cup water.

2 cups heavy cream, whipped.

 

Wash and clean the fruit. Put in a saucepan with sugar and water and cook slowly until tender. Put through a sieve to puree. Cool. Fold in the whipped cream and turn into dessert glasses. Chill. Serves 4 to 6.

For raspberries, you may wish to use less sugar, if desired.
