Belgian Beer Waffles

Gaufres bruxelloises are light and crisp creations that can be served as desserts or as snacks.

INGREDIENTS

2 cups sifted all-purpose flour.

4 eggs, separated.

1 teaspoon sugar.

5 tablespoons melted butter.

Salt to taste.

Half teaspoon vanilla.

Half a cup of light beer.

Two-thirds cup milk.

Confectioners’ sugar.

Whipped cream.

PREPARATION

Combine the flour, egg yolks, sugar, butter, salt, vanilla, beer, and milk in a bowl and beat until smooth. Whip the egg whites until stiff and fold into the dough mixture. Spread a little of the batter on a waffle iron and cook. Serve with confectioners’ sugar and whipped cream.
