3 Fall Baking Recipes You Need To Try ASAP

This year has been anything but normal.

The holidays are approaching and it’s time to enjoy the season! With fall here there are many activities we all look forward to, pumpkin patches, apple picking, Halloween movies, and baking! Baking is a classic way to enjoy the season’s best flavours.

Who doesn’t love a good pie recipe? Here are some baking ideas for you to try!

1. Pumpkin Pie Cheesecake – what’s better than pumpkin pie, well-combining pumpkin pie and cheesecake of course!
Prep time: 30 minutes
Cook Time: 1 hour
*Preheat oven to 350 degrees.

Ingredients

4 tablespoons unsalted butter, melted
1 ½ cups ginger cookie crumbs
2 tablespoon sugar
Directions for crust: combine ingredients into a bowl and mix

Press ingredients into the bottom of the buttered/greased pan

Bake until crisp (12-15 minutes) then let cool for 30 minutes

Ingredients 

¾ cup sugar
¼ cup chopped crystallized ginger
3 (8oz) packages of cream cheese
3 large eggs
2 tablespoons heavy cream
1 tablespoon cornstarch
1 teaspoon vanilla
1 ½ teaspoons cinnamon
½ teaspoon nutmeg
½ teaspoon salt
15 oz can of pumpkin
Directions for filling:

while the crust cools, make the filling! Keep the oven to 350 degrees. Combine sugar and ginger and mix until ginger is finely chopped then add cream cheese and mix until smooth. Add eggs, cream, cornstarch, vanilla, nutmeg, cinnamon, salt, and mix. Pour the mixture on top of the pie crust once cooled. Place back in the oven and cook for 45 to 55 minutes until the centre is cooked through. Once done, cool at room temperature for 2 hours. Then chill for 4 hours and then it’s time to dig in! 2. Caramel Apple Pie – my mouth is watering just typing this!

Prep time: 20 minutes
Cook time: 45 minutes

*Preheat oven to 425 degrees.

Ingredients and directions for filling:

1 unbaked pie crust (premade) or you can use your own pie crust recipe
6 cups sliced apples (a reason to go apple picking)
1/4 cup brown sugar
3 tablespoons cornstarch
1/2 teaspoon cinnamon

Ingredients

3/4 cup flour
1/2 teaspoon cinnamon
1 cup rolled oats
1/2 teaspoon salt
1/4 cup brown sugar
1/3 cup white sugar
1/2 cup butter or coconut oil
1 cup white sugar
1/4 cup light corn syrup
6 tablespoons butter
6 tablespoons heavy cream
1 teaspoon vanilla

Directions for filling: Combine the apples, brown sugar, cornstarch and cinnamon. Place in a crust.

Directions for topping: Combine all the topping ingredients with your fingers until crumbly. Sprinkle the crumbles on top of the apples.

Bake for 45 minutes. Watch the top. Throw a piece of foil on top if it starts getting too brown.

To make the caramel, combine the sugar and corn syrup in a saucepan. Cook, stirring often until you get a deep brown colour. Remove from heat and add butter, cream, and vanilla one at a time. If you have trouble getting it to dissolve, return it to the heat for a minute. When the pie and the caramel are cool, pour caramel your topping over the pie. Since Thanksgiving is approaching here is one of my favourite recipes we make with leftovers:

3. Thanksgiving Dinner Leftover Pie:

Prep time: 20 minutes
Cook time: 40 minutes

*Preheat oven to 350 degrees

Ingredients and directions for filling:

2 cups mashed potatoes
3 cups stuffing
2 1/2 cups turkey boneless and skinless (shredded)
1 cup corn
4 tablespoons butter
1/2 teaspoon pepper
½ teaspoon salt
Remove leftovers from the fridge, place them all in a bowl and mix.

You can make your own pie crust or buy one that is premade. Place all mixed ingredients in the crust then bake for 40 minutes or until it’s golden brown. Let’s cool down and enjoy! This is a great pie to bake so nothing goes to waste.
