Desserts: German Apple Pancakes
Apple-filled pancakes are among the numerous great Western European desserts made with this popular fruit.
Ingredients
6 tablespoons butter or margarine.
4 tart apples, peeled and thinly sliced.
2 teaspoons grated lemon rind half to three-quarters cup sugar.
1 teaspoon ground cinnamon.
1 cup sifted all-purpose flour.
One-quarter teaspoon salt.
1 cup milk.
2 eggs, beaten.
Confectioners’ sugar.
Melt 2 tablespoons of the butter in a skillet and add the apple slices. Cook slowly until tender. Add the lemon rind, sugar to taste, and cinnamon. Mix well. Leave in the skillet over very low heat. Combine the flour, salt, milk, and eggs in a bowl and stir with a fork or whisk until smooth. Add the remaining 2 tablespoons of butter, melted, and mix again. Heat a 7 to 8-inch skillet, lightly greased, and add 3 tablespoons of the batter. Tilt the pan at once to spread the batter evenly. Cook over medium heat until the underside of the pancake is golden. Turn over with a spatula and cook on the other side. Turn out onto a warm plate and keep warm in a preheated oven. Continue cooking the other pancakes. Spread half of each one with a thin layer of the warm apple mixture. Fold over and sprinkle confectioners’ sugar. Serve at once.
