Soups: Danish Cold Buttermilk Soup
Scandinavians are devotees of sour milk products, which have long been important to them as foods. One of the most interesting dishes made with buttermilk is a Danish summer soup, served with spoonfuls of whipped cream floating on the top, with the unpronounceable name Kaenemaelkskoldskaal.
Recipe
3 eggs.
One-quarter cup sugar.
Juice one medium lemon.
One tablespoon of grated lemon rind.
One teaspoon of vanilla extract.
One and a half quarts cold buttermilk.
Whipped heavy cream ( optional).
The Cooking
Beat the eggs in a large bowl with an electric beater or whisk. Slowly add the sugar, the exact amount according to the desired taste. Add the lemon juice, lemon rind, vanilla, and buttermilk, two cups at a time. Continue to beat until well mixed and smooth. Chill. Serve with spoonfuls of whipped cream floating on top.
