Dish: Andalusian Grilled Hake With Vegetables

Hake, or merluza, is a very popular fish in Spain and is prepared in a number of interesting variations. It is a relative of cod and is caught in the Atlantic in great quantity. If not available, cod can be substituted for it.

Recipe

2 pounds hake fillets.

3 tablespoons fresh lemon juice.

Olive oil.

Flour.

1 pound asparagus, cooked and drained.

6 medium potatoes, cooked, drained, and boiled.

4 hard-cooked eggs, cooked, shelled, and sliced thickly.

1-quarter cup chopped fresh parsley.

Sprinkle the fillets with lemon juice, 8 tablespoons of olive oil, salt, and pepper, and leave for 20 minutes. Dredge in flour on both sides. Grease a grill or large skillet with oil and fry the fillets on both sides until tender and golden. Serve on a large platter surrounded by asparagus and potatoes and garnished with eggs and parsley.
