- 4 peaches cut into small pieces (½ inch cubes) – approximately 2 cups – pick firm but ripe peaches
- 1 cup cherry tomatoes sliced
- 1 small red bell pepper seeded and chopped
- 1 jalapeno pepper seeded and chopped
- ½ red onion chopped
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ cup lime juice
- ½ cup chopped fresh cilantro optional
- ¼ teaspoon chili powder optional
